Subtracting the rate does not work
Taking 7.25% off $107.25 gives $99.47, which is wrong. The tax was charged on the net price, not the gross, so you divide rather than subtract: 107.25 ÷ 1.0725 = $100.00 exactly. The error grows with the rate — at 20% VAT it is over 3%.
