Not everything scales linearly

Flour, sugar, liquid and fat scale exactly. Salt, spices, leavening and yeast scale sublinearly — doubling them usually overshoots. Cooking time barely scales at all: a doubled cake in one pan needs a lower temperature and a longer bake, not double the time. Multiply the bulk ingredients, then taste and adjust the rest.
