Why water is the default
Water's specific heat of 4,186 J/(kg·K) is unusually high — about ten times iron's — which is why it takes so long to boil a kettle and why coastal climates are milder than inland ones. Heating one litre by 10 °C takes 41.9 kJ, so a 2 kW kettle needs about 21 seconds, which is roughly what a stopwatch shows.
