Baker's percentages explained

Every ingredient is expressed as a percentage of the flour weight, which is always 100%. A 65% hydration dough has 650 g of water per kilogram of flour. It sounds convoluted until you scale a recipe — then it is the only system that works, because the ratios stay fixed however much you make.
